When the final order is done, the restaurant closed and cleaned up for the day, Chef Nathan Jackson takes the time to sit back and relax on his armchair with a glass of cold beer. After achieving the day’s goals, there is absolute freedom to live afterwards. He says that the peace and quiet after a long day gives him time to rest and reflect on what he has achieved and how he can do better the next day. That for him is the biggest motivating factor to come back and do it all over again.
